My greatest memories are at my family’s home in Oahu, Hawaii.

I first learned to surf on Waikiki beach, spent Christmas with my family body surfing in the tropical rain and learning to Hula Sunday morning’s downtown Honolulu.

My taste for pineapple has never abated, so this recipe is a great treat.

  1. Place the chicken in crock pot.
  2. In a bowl, combine the pineapple juice, salad dressing, onion soup mix and lemon peel.
  3. Pour over the chicken.
  4. Cover and cook on low for 6-7 hours or on high for 3 to 4 hours.
  5. Twenty minutes before serving, arrange pineapple slices and green pepper strips over chicken to heat through.
  6. Arrange chicken, pineapple and green pepper on large serving platter.
  7. If desired, thicken juices with 1 tablespoon cornstarch dissolved in 1 tablespoon water.
  8. Stir slowly into juices until thickened slightly.
  9. Pour over chicken.
